Did you know that the avocado is not actually a vegetable, but a berry? No wonder it is perfect for smoothies! Avocados are an extremely healthy plant based fat that also contain fibre and protein. One cup of avocado provides 3 g of protein. Avocados make an excellent substitution for butter as a spread on toast and go very well with eggs, either in breakfast wraps and sandwiches, or as a topping on scrambled eggs and omelettes.
Makes 8 – ½ cup Servings
1 Medium Avocado, soft and peeled
1 Cup Plain Greek yogurt
2 Cups Milk
2 tsp Vanilla extract
2 Tbsp Maple Syrup (or honey if you prefer)
Ice Cubes or crushed ice
Place all ingredients in a blender, and blend for at least 30 seconds until smooth.
