Healthy eating doesn’t mean you have to eat rabbit food, but this Easter you will want to try these carrot-filled recipes!
Dress a table with an Easter tablecloth and create a buffet of delicious dips with sliced and baby carrots. Try bowls of hummus, bean dip, tzatziki and plain Greek yogurt.
Yield: 12 muffins
Preheat oven to 400°F (200°C) and grease or line a 12-cup muffin pan.
In a large bowl, combine flour, cereal, baking powder, baking soda, cinnamon, nutmeg and salt.
In a separate bowl, beat eggs; blend in carrots, buttermilk, brown sugar and oil. Add to dry ingredients, stirring just until moistened. Stir in raisins.
Spoon batter into muffin cups and bake for 20 minutes.
