Apples are one of the most versatile fruits and can be added to just about any dish, sweet or savory. They also happen to be in season right now, and are an affordable fruit to serve in breakfast programs. It’s no surprise we are featuring apples as our Food of the Month!
Apples provide a good source of Vitamin C, as well as potassium, and are high in anti-oxidants that are beneficial for our health. When eaten with the skin, 1 apple contains nearly 17% of our recommended daily fibre intake. Fibre is important for balancing blood sugar levels, and for a healthy digestive system. Some studies have shown that apples can even help protect against diabetes and heart disease.
For breakfast this month, try using apples in a variety of ways:
Make your own applesauce on the stove or in a crockpot. Peel, core and chop 6 sweet apples (ex. Fuji, Yellow Delicious, HoneyCrisp). In a pot, combine the apples and ½ cup water or apple juice. Simmer until apples are soft. Remove from heat and puree in food processor or blender.
Serve applesauce as a topping for pancakes, or add to oatmeal with a little cinnamon.
