Every month the Club has featured a different fruit or vegetable, encouraging our breakfast club partners to try new recipes and serve produce that is in season. Now that the school year is coming to a close we are featuring a different type of food… LEFT OVERS! It’s time to use up all of your yummy breakfast ingredients before school’s out for summer, while still offering healthy and filling options for your students.
Do you have a lot of whole grain cereal, dried fruit and seeds left over? You can make trail mix! Try this recipe.
Wondering what to do with all of the left over oats, raisins and nut butter? Try home-made energy balls! Try this recipe.
Smoothies are also a great way to use left overs. Blend up a batch using left over spinach, ripe bananas, frozen berries or canned fruit. Don’t forget to add milk or yogurt for protein, and flax seed or avocado for healthy fat.
You can make a huge batch of smoothies and freeze them into smoothie pops for perfect warm weather breakfasts, like this recipe for CoolBlue Smoothie Pops. Smoothie pops, trail mix and energy balls make ideal snacks for sports days, picnics and end of school celebrations too.
