2 cups grated cheese
2 cups whole wheat pastry flour
1 tbsp baking powder
½ tsp salt
1 ½ cups milk
½ cup ham, chopped
Large handful of baby spinach, chopped
Sprinkle of mixed herbs (optional)
1. Preheat oven to 350◦
2. Mix flour, baking powder and salt in a large bowl.
3. Chop spinach and ham, whisk the eggs
4. Make a well in the flour, add in the rest of the ingredients and mix until combined.
5. Spoon into greased muffin pan (sprinkle with herbs), and bake for 22-25 minutes or until the tops are golden brown.
