Get your weekend off to an “mm-mm-good” start with this delicious (and nutritious!) Berry Baked Oatmeal Casserole recipe.
Serves: 8 | Prep Time: 10 mins | Total Time: 50 mins
- 2 cups oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup diced dates
- 1/4 cup molasses*
- 1 cup strawberries
- 1 cup blueberries
- 1 ripe banana
- 2 cups milk
- 1 large egg
- 2 tbsp butter softened
- 1 tsp vanilla extract
- Preheat oven to 375°F.
- Spray a 10×10 inch casserole dish generously with cooking spray.
- In a large bowl, mix oats, baking powder, cinnamon, salt, dates, maple syrup, molasses and half the berries. Stir well and pour into casserole dish. Add the other half of the berries to the top of the mixture. Then slice the banana and add to top.
- In a separate bowl, combine milk, egg, butter and vanilla. Whisk thoroughly. Pour on top of oatmeal mixture, making sure all oats are soaked evenly.
- Bake for 35 minutes. Let cool.
*Blackstrap molasses is digested more slowly in the body, which helps to stabilize blood sugar levels.
